I hate to bake! But I love coconut cake and saw a picture of one online that I thought would be perfect since the coconut covers a multitude of icing flaws, which I hate the most about baking. I'm pretty happy with the way it turned out, and I filled it with pineapple, a favorite flavor combination of mine. The butter cookies I displayed in martini glasses and then packed two per little baggie as a little take-home treat. Tfl.
