Journaling:
Along with our suite, we arranged for cheese-making classes with Gina, the owner. We started with fresh milk from the resident goats and were given instructions and demonstration on how to make homemade mozzarella.
We also helped make yogurt to go with the breakfast parfaits. The goat cheese was nutty and hearty; the yogurt was surprisingly rich and delectable.

After our class, we decided to take a hike around the lodge's nineteen acres. The lodge rests at the foot of the famous Sawatch Mountain Range in central Colorado. The goats and llama roam the acreage but didn't want to have much to do with us! The goats had carved out paths that we followed around the property with our treats and water in tow. Salida is known as the “Gem of the Rockies” and we could see why! The day quickly grew warm and as we were still full from our breakfast, we followed up our nature walk with a nap.
