This was done for the July Challenge on the Grans group. We were to scrap a favorite recipe. This non-diet dish is my hubby's favorite thing I cook (well maybe besides lemon meringue pie). When I cooked it the other day I took pictures. There is a recipe card that pulls out at the top of the layout. Fried Potatoes:
Bacon scraps (or 6 slices of bacon)
1 large Sweet Onion, peeled and sliced
Yukon Potatoes (enough for 8 cups sliced/diced)
Salt
Vegetable oil

Cook the bacon in a large nonstick frying pan (mine's 12”) until crisp. Remove the bacon onto paper towel. Remove the black bits from the oil and save oil in a bowl.
Put 2 T of bacon grease and 1 T of veg. oil into frying pan. Add the onion and cook on med-low heat for about 10 minutes. Remove from pan and put in a bowl.
Scrub potatoes and slice into 1/4” pieces. Then cut those slices in half. Remove moisture from potatoes with a towel.
Add 3 T. of bacon grease & 1 T. Veg. oil to frying pan, heat on med-high heat for a minute, then add the potatoes. Cook for 10 mins., stirring often. Shake 1 tsp. salt over them, layer onions on top. Cover & turn heat down to medium. Remove lid and stir every 8 minutes. (I use paper towels to remove the moisture from the lid). I do this about 4-5 times until potatoes are browned and soft. Season to taste.
