This recipe is a family favorite. I first came across a similar recipe from Pampered Chef, I have made some changes to fit my familys taste. The original only called for 1 tomato and biscuits. I add alot more tomatoes and use slices of baguette.
TOMATO BACON BREAD 8 Slices Bacon, I use Turkey bacon 5-6 Roma Tomatoes, seeded, chopped small 1-2 Green Onions, chopped Mozarella Cheese, shredded 1/4 to 1/2 cup Mayo, enough to get mixture wet 1 Baguette sliced into rounds
Preheat oven to 350. Cook bacon until evenly brown. Drain on paper towels. Crumble bacon into mixing bowl, mix in tomatoes, onions, cheese and mayo. Lay slices of baguette on baking sheet and spread mixture over each slice. Bake for 8-10 minutes, until cheese is melted and bread is crispy.
Will make about 2 baking sheets of appetizers. Recipe can easily be cut in half or doubled.
