Oooo...I am totally going to try this. I love pumpkin bread, cookies, pie, scones, anything with pumpkin in it. In fact right now I am drinking coffee with pumpkin creamer.
looks yummy but I really don't "do pumpkin" LOL. AND.... ummm... you get up and do this BEFORE breakfast!? YIKES!! I am barely functional on weekends when the kids start moaning they are hungry - and if you think I'd do this at 4:20 on a weekday morning... ummm... NO :)
looks very yummy - something my hubby would enjoy. I'll have to give it a try. Just need to find a bundt pan. What temperature should the oven be set at?
My favorite quick bread to make - we LOVE this for breakfast in the morning. It's called "Pumpkin Bread" but it's really more of a cake - and it's delicious!!! (even if you don't like pumpkin pie!)
Pumpkin Bread (preheat oven to 350F)
3 cups sugar 1 cup oil 4 eggs 2 cups canned pumpkin (just use one can) 3/4 cup water 3 1/2 cups flour 2 teaspoons baking soda 1 1/2 teaspoons salt 2 1/2 teaspoons cinnamon 2 1/2 teaspoons nutmeg (or you can use 2-3 Tablespoons of Pumpkin Pie Spice instead of the cinnamon & nutmeg)
In a large mixing bowl combine sugar, oil, eggs & pumpkin - mix until smooth (I use a hand-held mixer and beat until a little fluffy - makes for a lighter bread). Sift dry ingredients together and add to sugar mixture, alternating with water. Pour batter into a lightly greased bundt pan (fill ONLY half full!) and 12 muffin cups. Bake bundt pan for 50 minutes to 1 hour (check during last few minutes!) and muffins for 15-20 minutes. Cool for 10 minutes in pan then turn out onto a rack to finish coolling. When completely cooled, sprinkle with powdered sugar.
If you like, you can add 1 cup of chopped pecans and/or 1 cup raisins before pouring into pans.
