In a mixing bowl, combine 1 ¼ cups quick cooking rolled oats and 1 ¼ cups milk; let stand 10 minutes. In another large mixing bowl combine ½ cup whole wheat flour, 1 T brown sugar, 1 t baking powder, ½ t salt. Add 2 slightly beaten eggs, 3 T melted butter, and 2 T honey to the oat mixture. Mix well. Add the oat mixture to the flour mixture. Stir well but mixture should be slightly lumpy. This has more of a bread or muffin consistency than pancake. Add more milk if you want a thinner batter. Cook on a hot griddle. Pour about a ¼ cup batter to make a 4 inch pancake. Makes about 12 pancakes. From BH&G.
