Looks scrumptious! I don't like green peppers (I LUUV red, yellow & orange ones) but this is still drool worthy, & ditto Bren about cooking the rice in the tomatoes.
Mmm. I love the idea of cooking the rice in the stewed tomatoes. Savory. I've stuffed red and green bells with ground turkey, pasta sauce, zucchini, butternut squash, and the tops of the bells I've diced. I can't remember what seasonings I've used. Cumin? Haven't had it in a while...
One of my comfort foods. I'd forgotten about making them till a friend called the night prior saying she'd found a new recipe she wanted to share, so I dug up this ol' favorite.
