Made to take with us to the camp this weekend. Always great to have a loaf of this laying around!! LOL!!!

Hot Italian Sausage 2 lbs.
2 bags of fresh spinach
1 sweet onion
juice of 1/2 lemon
salt
pepper
2 pizza dough 16-20 oz
Tuscan seasoning
2 bags shredded cheese mixture, colby, mozzarella and cheddar
Grated Parmesan Cheese
2 egg yolks
1 1/2 tablsp olive oil

In skillet saute onion in butter till just transparent. Add spinach leaves, juice of 1/2 lemon, salt, pepper and cover let wilt slightly, turn over leaves frequently...only takes about 5 minutes. Remove from stove and place in a bowl, set aside. Cook Italian sausage...buy either in bulk or if in casings...take out of casings and break up. Cook through and drain well. Remove from skillet and place in bowl. Let pizza dough come to room temp then roll out pizza dough sprinkled with Tuscan seasoning. Once rolled layer the shredded cheese, then spinach mixture (squeeze out the extra juice in spinach before placing in bread) and sausage, then another layer of shredded cheese. Roll the dough length wise, tucking in all the goodies, after first complete roll, tuck in ends and continue to roll up. Place on a greased cookie sheet with both some butter and about a teasp of olive oil...(prevents the butter from burning and won't stick to pan should the cheese ooze out here or there). Make an egg wash out of two egg yolks and olive oil, beat slightly or you're on your way to making mayonnaise!! Coat each bread and top off with grated Parmesan Cheese.Bake at 350 for 45 minutes. Let rest for 15 minutes before cutting and serving. Enjoy!!!
