I love that paper on the card, or is it doodling? It's very pretty whatever it is!! If you want to change that side of the card, I would say show off more of that bg!
I agree that having the bear surrounded by the fiber divides the card into two halves visually. It's probably too late now but for future cards, I'd let items like the bear be most of the front of the card, maybe one phrase above or below. I like the inside and the bear is adorable!

I like it! I agree with Magik above about the caps. You have to watch the switch back and forth, it makes the reader stumble a bit while reading. Other than that, it is great!
Being that you're not happy with it, my two cents on it are as follows.
Cover: Bear is boxed in with the fiber giving the card two distinct halves vs. working together. Also I think the bear would look very cute if he were not centered on the pp and move the title "My forever Valentine" to the top right corner w/o the boxed in look so it would unify the card elements.
INSIDE: I would type just as a card:
(Leave her name out up here for him to fill in)
(center the following text w/ the script and watch the caps throughout, it makes it harder to read):
You are the sweetest, kindest,
most caring and loving person I know.
Because of you, Sarah, I wake up smiling
knowing that you will be there to brighten my day.
I thank God everyday for allowing
someone so beautiful in my life!
(I'd leave off the last line and let him handwrite it in too followed by his own signature.)
Hope this gives you some new light for something new that will make you happy with the card.
I think the card is really cute. One thing I would suggest is maybe use a fiber a little less frilly. It kind of takes away from the bear. Other than that I think you did a great job!!
My son's friend asked me to make him a card for his girlfriend. This is what I came up with, but I am not happy with it. I do like the bear. I cut each piece out and attached with double sided foam tape for dimension. What I don't like is the other side of the card.
