Journaling: Restaurante Las Colinas is frequented mainly by locals. It sits in a residential neighborhood away from the tourist area. Their specialty is guapote (lake bass) which is gutted then deep fried whole leaving the eyes and fins intact. These particular fish, from Lago Cocibolca (Lake Nicaragua), have teeth. The restaurant is a large ranchero structure with a thatched roof and dirt floor. I was amazed the whole time we were gone how clean a room with a dirt floor can be.
