can you turn the pulp into a jam type spread? Good on you for using so much of it. My Sis and Mom would love the lemon candy... me? Maybe if it was doused, soaked and smothered in chocolate! :)
I love almost anything lemon-flavored! As I mentioned the other day, I made a lemon pie. I found a recipe for candied lemon rinds online a while back and was just waiting until I had enough rinds to do something with them. Made my first batch this afternoon. They are suppose to dry for 4 - 6 hours, but I did a early taste test and think they are going to be good once they finish drying. I made some lemonade tea with the syrup that these were boiled in. Now, to find a way to use the pulp that is left and I will have literally used the entire lemon. How is that for being "thrifty"! lol
