This is my entry into Meggiec's Soul Food journal. My journaling reads, “One of my most favorite things to do is cook. I just love creating a delicious meal for my kids and myself. Growing up, my Mom didn't teach me how to cook because she felt that it was her ”job“. So, I grew up eating her fabulous meals, not having a clue as to what was in them or how to make them. That wasn't a problem until I got married and had to start cooking my own meals for my husband and myself. We had a tiny kitchen in our first apartment…no counter space; a tiny stove with the burners all squished together, and one of those small apartment size refrigerators. I couldn't even fit a large pot in the sink! Quite a difference from my Mom's huge kitchen with all the neat appliances. I don't remember the first meal I cooked except that it involved making rice. How hard could it be, right? Well, I soon found out that there is more to cooking than just throwing some ingredients together in a pan. My rice was burned on the bottom…so badly that I ruined a new pan that had been a wedding gift. We ordered out that night. That is how I began my journey into the cooking world. After that fiasco, I went out and bought the Fanny Farmer Cookbook along with The Joy of Cooking. I learned how to set a table, picked out some recipes that looked easy enough, and was soon on my way to cooking a decent meal. Today, I am a Food Network fanatic, have a huge collection of cookbooks and magazines, and I Love To Cook! I love trying new things, but our favorites here at home have always been ”comfort foods“, like meat loaf and mashed potatoes, pork chops with applesauce, and macaroni and cheese. One of the hardest challenges I find in cooking for more than one person is pleasing everyone. It is sometimes difficult to cook meals that even both my kids will enjoy. Birthdays are a prime example. My daughter loves cake and so do I. My son, on the other hand refuses to eat cake…he just doesn't like it. We decided that we would have ice cream cake, since everyone likes that. But a few years ago, my son asked me to make him a raspberry pie for his birthday, and so began the Raspberry Pie Birthday Cake tradition in our home. Every year for his birthday he gets to have raspberry pie. And my daughter and I are happy too…we like it! I like to try a different recipe every year…here's the one I used for his last birthday.
