Love the photo of the cookies! Great pp's too. I am not a fan of chocolate and pumpkin together, but my dd loves it. She makes something similar to this, just not decorated, with her dad. She would love these!
The little faces are cracking me up. These cookies look really yummy! I have that loopy punch and never use it. I really like it on your LO. It gives it a whimsical feel.
4 Cups all-purpose flour (I use cake flour) 2 Cups oats – can be quick or old fashioned 2 tsp baking soda 2 tsp cinnamon 1 tsp salt 1 ½ Cups softened butter or margarine (I only use butter) 2 Cups packed brown sugar 1 Cup granulated sugar 1 egg 1 tsp vanilla 1 can (16 oz) solid pack pumpkin 1 Cup semi-sweet chocolate chips or raisins Assorted icings and decorations
Preheat oven to 350. Combine flour, oats, soda, cinnamon and salt. Set aside.
Cream butter; gradually add sugars – beat until light and fluffy. Add egg and vanilla; mix well.
Alternate additions of dry ingredients and pumpkin, mixing after each addition. Stir in chocolate chips.
For each cookie, drop ¼ cup dough onto a lightly greased cookie sheet; spread into a pumpkin shape. The recipe says to use the back of a spoon but I found that it's easier to shape the pumpkins by smearing each glob into a pumpkin shape with my finger. Then I use my finger again to dip into the bowl of dough for another small glob for each stem. I get a much better pumpkin shape with stem that way.
Bake at 350 for 20-25 minutes. They are fairly large on the cookie sheet but they don't spread out much but I do give them a little bit of room. I put about 9 cookies per cookie sheet and it makes 40-50 cookies.
Cookies will be firm and lightly browned. Cool on racks or paper towels. Have fun decorating these Halloween cookies!
For my frosting I just dump a 2 lb box of powdered sugar in a large bowl, add a little water, stir, add a bit more water and stir – I keep doing that until it is the right consistency. If I get it too thin I add more powdered sugar. If it starts to get thick while frosting the cookies I add a little more water. I added red and yellow food coloring to make it orange.
I go to the Wilton section of the craft store and buy really cute cake decorator mustaches, red lips, eyes, eyes with eyelashes and even green and yellow monster eyes. Candy corn makes a great nose! A sliced piece of a fruit jelly candy can be split for a great mouth too and M&Ms can be used for eyes, nose or a curved line of them makes a mouth. Get as creative as you want with the decorating!
