My Mom's recipe for Banana Cake, made into cupcakes & filled with lemon pie filling & frosted with Banana frosting.
Cream 1/2 c. shortening & 1 c. sugar. Beat well & add 2 eggs till mixed together. Add dry ingredients, 2c. flour 3/4 tsp Baking soda, 1 tsp. baking Powder & 1/2 tsp salt alternately with 1/4 c. sour milk & 1 c. mashed bananas. Spoon in 20 to 24 cupcakes & bake 350o for approx. 14 to 17 min. Test with tooth pick. Should be barely brown. Cool completely. While cooling make your favorite lemon pie filling. Cover with plastic wrap so "skin" doesn't form on top. Cool to room temp, but not solid, about 30 min. Cut cone shape from top of each cupcake & fill with pudding & gently press down top so some filling spills over top. Cool completely. Frost with 3 Tbsp. softened butter, (approximately)1.5 c. powder sugar, 1/2 mashed ripe banana & some lemon juice to the right consistancy. Swirl over cupcakes in haphazard manor so some of the lemon peeks through. Best made day before!
