I am on a lemon kick right now and this look like it would fit the bill perfectly! Your friends are so lucky to have you make all this yummy goodness for them.
I am drooling over here....this looks so delicious! I don't think I've ever tried a jelly roll kind of cake...always figured I'd never get it out of the pan and be able to roll it without it cracking.
Timex, Oh I thought your oven was out of order, haven't seen hardly any of your baking nummies in a long time, Is this the lemon cake you told me about the other day when we were talking on the phone? Now, I know I really must get one of those scratch & sniff monitors! hummmmmmmmmmm
My friends thought I was starving them, so I had to bake! LEMON ROLL: Make a angel food cake following cake mix directions but add rind of 1/2 lemon & pour into 2 - 10" x 15" jelly roll pans lined with release foil. Baked for 20-23 minutes. Sprinkled 2 towels with powder sugar, turned hot cakes onto towels, peeled off foil, rolled cakes & kept wrapped till room temperature. Mixed 1 can lemon pudding with remaining rind of 1/2 lemon. Whipped 1/2 pint whipping cream with 3 Tbs powder sugar & folded in the lemon pudding till fully blended. It gets very thick. Spread equal amounts on each cake roll. Roll up cakes, wrap in plastic wrap & refrigerate overnight. Before serving sprinkle with powder sugar. NOTE: You can use a angel food cake split in 3 layers if your in a hurry!
