I have an old drafting table also, I use it to cut quilts out on, just the right height. I have so many of the self healing matts due to the rotary cutting that I do with the quilts. I love your space!!!! I think you need a hugh room for all the things that you have. Maybe a house just for your supplies!

My husband helped me drag this heavy drafting table upstairs and remove the drafting hardware so that I could use it for scrapbooking. I love it because it has a rubberized vyco sheet that heals when it's cut so I don't need to used a separate cutting matt when I'm working at my table.
