Halloween Dessert for my McD's crew! Very decadent! CHOCOLATE UPSIDE CAKE (Serves 16) Cake - moist, heavy, dense like homemade. BASE: 1 cup water in bowl with 1/4 cup butter, melt & stir in 1 cup packed brown sugar till totally blended. Pour in 13" x 9" pan, sprayed well with an oil spray (NOT olive oil). Sprinkle over water sugar mixture: 1 cup chopped pecans, 1 cup shredded coconut, 2 cups mini marshmallows 1-1/4 cup mini chocolate chips.( Marshmallows melt & disappear.) Set aside. CAKE: 1 chocolate cake mix (don't follow directions) 1 pkg. 4 serving size cooked style pudding, 1/3 cup melted butter, 4 eggs, 1 cup hot water. Put dry cake mix in large bowl with 1 pkg. dry pudding mix, add the eggs, the butter, begin beating well, add the hot water (makes the chocolate "bloom"). Because the "Base" ingredients are so "wet" you have to spoon the cake batter (it's thick) gently over base ingredients. Bake 350o for 48 to 55 minutes testing in center of cake, with toothpick. Remove, cool complete.Cover & serve the next day. Most baked cakes are better after covering, allowing flavors to mellow. Cut & invert each piece. Serve with a dollop of whipped cream. NOTE: Because I took this to coffee gang, in wheel chair, carrying a ton of stuff isn't an option so I frosted the cake with the cream. That is why, its on the bottom in photo! You can't serve it this way easily because, when eating with fork, the cake slips all over the plate! SO, slice turn over & place a tad of cream on top. It's rich, so cut slices small.
