Also known as Funeral Potatoes! I never had these until my friend, Bill, made them for a cookout we were going to - I was 1) surprised he made it; 2) delighted at how yummy it was; and 3) grateful his mom shared the recipe (this was way back before I had my own computer to do recipe searches with). It's now my go-to dish for large gatherings though I try to “healthy” it up a bit (ok, not really - just use the low-sodium low-fat cream of mushroom!).
