It's hard adjusting our schedules to accommodate our aging parents. Welcome to the squeezed generation. Dinner looks delicious, and it's thoughtful of you to fix it at their house in an unfamiliar kitchen so that they don't have to travel. You're thoughtful.

With my parents getting older, rather than our tradition of them coming to my house for Christmas dinner, I gathered up all the ingredients and made dinner at their house. Going along with our tradition, I lleft the protein choice up to them and my dad asked for prime rib. So our dinner was prime rib, savory Yorkshire puddings, roasted balsamic green beans, carrots, Parmesan crispy roasted potatoes, lobster salad and a Yule log from one of my favorite bakeries.
