For my 8x8 recipe album: My boss had an over-abundance of tomatoes and basil - lucky me!!! I love this super easy summer pasta recipe, which is written out under the flap with the apron. I dont measure since Im just cooking for me. The ingredients are minimal: tomatoes, basil, butter, salt and pepper, crushed red pepper flakes, olive oil, pasta and Parmesan cheese. Quickly blanch the tomatoes and peel; cut into rough quarters (I dont de-seed but you could). Heat olive oil, salt and pepper and red pepper flakes till shimmery (hot). Toss in the tomatoes and squish. I have one of those meat crunchers but a fork, spoon, spatula would work. Simmer simmer simmer (I do about 20 min for 1-2 tomatoes). Add cooked pasta and stir. Cook until most of the liquid is evaporated. Remove from heat, sprinkle with cheese (freshly grated is better) and cut up basil. Pour a glass a wine and enjoy!
