Stuffed Green Pepper Soup

I was invited to participate in a soup exchange and had heard about Stuffed Green Pepper Soup. I was skeptical that this would actually taste like its name but it was an easy soup that made a lot of servings. Oh my gosh, its so yummy. I used beef bone broth for extra oomph and just a smidge more oregano and basil because I like those herbs. And the soup freezes well.
