This is my husband on his recent birthday. PP are scenic route, cs is bazzill, chipboard alpha is HS, chipboard arrow and photo anchor are BG, paint is MM, binder clip is Lil' Davis. In case journaling is fuzzy it reads: Darrel’s Mom always made the kids Carrot Cake for their birthdays. So, when we got married she wrote out the recipe for me. Because of course he didn’t want just any Carrot Cake….It had to be this carrot cake. The cake part isn’t too hard. However, I did have to learn not to pack too many carrots into the measuring cup because if you get too many, the middle of your cake ends up looking something like baby food! The icing is the real challenge. I heard this from Darrel’s sisters and from Darrel. They weren’t kidding. You have to cook flour and milk until it’s thick, but not lumpy. That has to cool and then is the base for your icing mixture. For quite a few years I ruined more batches than I made correctly. If you get it wrong, it wants to separate. I am proud to say though that after 19 years and as many birthdays I have it down to a science!
